2. How much steel

You want to buy a strong knife that is made of stainless steel. As such, consider the amount of steel that has been used to make the knife. Are there are signs of joining on the knife? If there is any form of joining in the hilt of the knife, this is a sure weak point. The knife should be made from just a single continuous piece of steel and this is the only way you can be guaranteed of a long-lasting and convenient knife.

If you want speed and precision as you chop ingredients in the kitchen, then you require a lightweight knife. Heavy knives would be suitable for chopping solid foods such as fresh ginger, nuts, and other harder ingredients.

4. Material used to make the handle
The kind of material used to make the handle will determine the length of time it will last. Knife handles are often made of wood, toughened resins, and plastic, among other hard materials. Avoid the knives with old fashioned bone handles as these could be dangerous to you. Bone becomes brittle with time and as such, it will be weak and dangerous as it could crumble in your hand and cause an injury. Whatever material the handle is made from, ensure that it is strong enough and can last longer.

5. What makes the blade?
Your knife is actually the blade! It is the blade that does the chopping and the cutting. Ceramics is the best knife blade. This is due to the fact that a ceramics blade is easy to sharpen and can hold the sharpness for a long time. It does not rust too. However, you should avoid cheap ceramics blades as they could be dangerous to you. Should you go for stainless steel blades, then they should be the high carbon stainless steel blades as they won't rust.
